I totally agree with your comments on the 2012 Caymus Napa: 1) it's terrible; 2) it's not at all typical of Caymus Napa; and, 3) I can't imagine how anyone who knows Caymus can say otherwise. There's someone out there who will love this wine, and that's one thing that makes the world go round. I suspect that's why Robert Parker rated it 96 points and why it's so popular across the country.Beauhttps://www.blogger.com/profile/05835422435318171027noreply@blogger.comtag:blogger.com,1999:blog-4644181335443143726.post-40601860971600543352014-11-08T20:20:19.768-08:002014-11-08T20:20:19.768-08:00This wine is terrible. For some reason the Wagner family deviated from their typical cab style. Too bad and can't believe professional raters are giving this wine these kinds of ratings.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-4644181335443143726.post-56165818921466545362014-07-28T16:09:12.992-07:002014-07-28T16:09:12.992-07:00Or they could have stopped fermentation with a col...Or they could have stopped fermentation with a cold tank then run the wine through a sterile filter before bottling, achieving a similar effect. Either way, it's a wine for a certain demographic, to be sure. Most producers of premium red wine will ferment their must until the wine is "dry," that is, it has no more fermentable sugar. Caymus may have done that and then added back either unfermented juice or some grape concentrate. We served Caymus as well as a variety of other California Cabs with nice rare steak last fall with our wine dinner group. The Caymus stood out as so sweet and ripe, most in our group thought it didn't really go very well with the steak. Maybe with some kind of chocolately dessert?Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-4644181335443143726.post-45880730466248876632014-06-17T17:40:33.898-07:002014-06-17T17:40:33.898-07:00You're right, there is one out that way, but i...You're right, there is one out that way, but it's quite a drive for me AND I have several Portland wine shops that I would prefer to give my business to. :)Beauhttps://www.blogger.com/profile/05835422435318171027noreply@blogger.comtag:blogger.com,1999:blog-4644181335443143726.post-33137721638701375802014-06-17T17:19:06.103-07:002014-06-17T17:19:06.103-07:00There *is* a Total Wine somewhat near you. You just have to be willing to drive to Vancouver/Vantucky/that place across the river (whatever you want to call it). ;) I was at the in-store tasting & webcast and it was awesome. After it was all done, they also had two bonus pours for us (one was another California cab and the other was a Super Tuscan) as well.Alinahttp://onegirloneglassoneworld.wordpress.comnoreply@blogger.com
